Meal prep can be kind of daunting. When I first thought of meal prep, I thought only super fit people who are counting their calories do this. However, once I started to meal prep I realized I don’t have to fit that mold. I meal prep solely for convenience. I’m a busy gal. During the school year, I am working at least 2 nights a week, I have club meetings and of course schoolwork. Here are some of my current favorite meal prep ideas. I will probably make another post when I try other ideas!
Breakfast burrito:
Liv and Ash know how much I love our local coffee shop’s breakfast burritos. Unfortunately, I go to school far away and I can’t simply drive home for them. These are so easy to make and easy to grab and go. They are almost as good as our hometown coffee shop.
I use eggs and cheese in mine but you could also add peppers, bacon, onion, or sausage! I scramble 8-12 eggs with salt and pepper. While those are cooking, I prep the aluminum foil and tortillas. Once the eggs are done I add them plus some cheese to each tortilla, roll them up, and wrap them in aluminum foil. They are good for about a week and a half. This would even be good to prep sandwiches on English muffins or bagels. To make them last longer you can freeze them too.
Taco/Burrito bowls:
We all love chipotle right? Well, you can meal prep it too! It is just as good in my opinion and again, super easy!
Cook your beef or chicken (I used 1-2 lbs), add taco seasoning, and boom your protein is done. I pre-make rice or purchase minute microwave cups from the store and assemble them when I want a burrito bowl. Again this is super easy and cooking the protein takes no more than 20 min.
Power bowls:
You can get super creative with these but I will just share what I do! I cut an assortment of veggies. This past week it was red/green peppers, mushrooms, and zucchini. I also add protein. My favorite is a kielbasa sausage. I throw it on a sheet pan with olive oil and an assortment of seasonings at 400 for 25-30 tossing halfway. I make rice or couscous to have with it., usually putting these in Tupperware like this right away.
Again you can get super creative with this, use different veggies, proteins and bases.
I usually make enough to get me at least for dinners or lunches and I pack them in these containers.
